Butter Pecan Arctic Char

Maria’s Butter Pecan Arctic Char Recipe
Adapted recipe from Olafur Baldursson’s sister, Gyda
Lemon Pecan Arctic Char
Ingredients:

4 Arctic char fillets (usually serves 4)

2 tablespoons olive oil

Fresh pepper and salt to taste

1 1/2-2 ounces butter

3 1/2 ounces pecans (or your favorite kind of nut)

1-2 garlic cloves, chopped

3 tablespoons parsley, chopped

1 lemon for lemon juice

Directions:

Preheat oven to 400 degrees Fahrenheit. Rinse the fish and pat dry. Brush the flesh side with olive oil and season well with pepper and salt. Bake for 10-12 minutes skin side down.

Next, take a pan and heat it on the stove top to make the sauce. Melt butter in the pan and lightly brown the nuts; stir frequently. Place garlic and parsley in the pan and sauté for 1-2 minutes, stirring constantly. Add freshly squeezed lemon juice to the pan, season with salt and pepper and remove from stove top. When the fish is done drizzle the sauce over the baked fish.

Serve with boiled potatoes and asparagus.
