Craig Johnson’s Cajun Fish Recipe

Recipe for both grilled salmon and grilled wolfish. Both delicious!

•       4 salmon fillet or wolffish
•       1 1/2 teaspoons sea salt
•       2 teaspoons paprika
•       1 teaspoon black pepper
•       1 1/2 teaspoons garlic powder
•       1 teaspoon onion powder
•       1 teaspoon dried oregano
•       1 teaspoon dried thyme
•       1/2 teaspoon cayenne

Combine seasonings in a bowl, mixing well. Place salmon fillets in a large re-sealable bag. Add Cajun seasoning and turn to coat. Refrigerate for 30 minutes to 2 hours.

Preheat grill.

Remove salmon from bag and place on hot grill. Grill salmon fillets for about 4 to 5 minutes per side, 6-8 minutes for salmon steaks. Remove when done. Salmon should be light in color and flake easily through the thickest part.
