Craig Johnson’s Grilled Wolffish
Grilled Atlantic Wolffish (serves 1, about 3/4 pound):
- 1/4 – 3/8 cup seasoned breadcrumbs
- 1 teaspoon dried oregano
- 1 teaspoon Old Bay Seasoning
- 3/4 teaspoon lemon pepper seasoning
- 1 teaspoon dried parsley
- 1/4 teaspoon sea salt
- 1/2 teaspoon garlic powder
Mix all of the above together in a plastic bag. Coat both sides of the fish with olive oil and add to the bag, pressing to insure contents coat the fish. Prepare a gas grill on high for 20 minutes. Spray with Pam or other non-stick spray. Drizzle a bit more olive oil on the top of the fish. Grill fish for 8-10 min per side, turning only once, until cooked but not dry. Sere with a lemon wedge or a bit of lemon juice on the fish.
