Kati Mauksch’s Salmon Fillet Recipes

- Pan cooked Salmon Fillet with sorrel sauce added (chopped sorrel, little butter, bit of sugar, lemon, touch of sour cream and flour).
- Saute onion, cubanelle or Italian pepper in strips, chopped tomato and add a little paprika at the end. Cook the fish on one side, turn and add the vegetables mix and finish cooking.
- Saute chopped scallions or shallots in olive oil, remove and save. Slightly flour the fish and season with ground yellow mustard (ground coriander seed), pepper, dill and salt. Add a bit more oil and touch of butter to pan, saute fish on one side, turn and add a little sour cream and onion. Gently sprinkle with paprika before serving.
